How to Prepare Lobster Recipes
Although almost any lobster recipe can be prepared
with canned
lobster meat, I prefer using the meat of boiled
or
steamed, fresh
live lobster or frozen
lobster tails.
Why?
Lobster in a can often has a saltier taste and is
less firm than fresh lobster meat. On the other hand, it can be
very convenient to use (you won't need to worry about lobster cooking
time) and readily available for spur of the moment dinner parties.
My advice is that you experiment, particularly if
you
plan to use canned lobster
meat
in recipes that have salt as an added
ingredient. You may want to cut back on the additional
sodium by first rinsing the canned meat and if necessary, adding less
salt than your recipe calls for.
