Although heat is distributed more evenly on a gas grill than a charcoal grill - as long as you have one or the other - you are ready to begin.

My only words of advice - do not use an electric grill for grilled lobster. You will not get the same flavoring as that produced by gas or charcoal grills.

Either frozen lobster tails, or the tails of fresh lobster, can be used for recipes that call for grilled tails. Just be sure, if you are using frozen lobster tails, that they have been thawed properly AND thoroughly.

When cooking lobster tails on a gas grill, pre-heat the grill to medium-high heat and then place the lobster tails directly on the grill rack.

When cooking lobster tails on a charcoal grill, prepare the charcoal, and when the coals are hot, place the lobster tails on a rack directly over them.

What types of lobsters or types of lobster tails can you use for grilling?

Cold water lobster tails or warm water lobster tails, hard shell lobster or soft shell lobster. Yikes, it sounds confusing! But it isn't.

Go with either a cold water lobster tail or a warm water lobster tail, keeping in mind that the meat of cold water tails is firmer than that of warm water tails.

Therefore, cold water tails are best to use in recipes that require that the lobster meat be removed from the shell. And...

If you buy fresh live Maine lobster for grilled lobster tails, use hard shell, not soft shell. The meat will be easier to work with.
